Cured semi-soft to semi-hard cheese with a slightly yellow paste and a few irregular eyes, obtained by draining the curd after coagulation of raw sheep’s milk, or a blend of sheep’s and goat’s milk, using animal rennet. Produced exclusively within its protected geographical area, this cheese reflects the deep artisanal tradition of Beira Baixa.

It presents a natural rind and a color ranging from soft yellow to toasted yellow. On the palate, it reveals a clean, slightly tangy flavor, with a smooth and balanced texture that becomes richer with age. Its aroma is intense and distinctive, a true expression of Portugal’s cheesemaking heritage.

Raw sheep’s milk (or blend of sheep’s and goat’s milk), salt, animal rennet.

Serving Suggestions
Best enjoyed at room temperature to fully appreciate its aroma and texture. Excellent on cheese boards, with rustic bread, or paired with full-bodied red wines and cured meats.

Storage
Store between 0ºC and 12ºC with packaging intact. Once opened, keep refrigerated and wrapped to preserve flavor and texture.
