Produced using the traditional “Passito” method, the grapes are left to dry naturally on the vine until October, carefully harvested, and pressed whole. The resulting must is clarified and fermented in French oak barrels. Fermentation is halted at the optimal density, preserving the natural sweetness characteristic of this late harvest wine. It is then aged for 4 years on fine lees, enhancing its structure and achieving full aromatic maturity.
