This artisanal sausage is crafted from black pork loin, seasoned with paprika paste, garlic and salt, with preservative and antioxidant added. It is stuffed into a natural pork casing, then smoked over holm-oak wood (azinho), resulting in a heterogeneous, marbled, luminous appearance with intramuscular fat streaks and a rich reddish colour. Exceptionally smooth and aromatic, it is best enjoyed raw in thin slices.
Origin
Portugal, Alentejo region, upholding heritage methods of slow smoking and premium pork selection.
