Handcrafted from raw sheep’s milk and coagulated using a natural infusion of thistle, this cheese embodies one of Portugal’s most celebrated traditions. The slow draining of the curd and a minimum aging period of 20 days give rise to a smooth, creamy, and slightly yellow paste with a rich, buttery texture that softens and yields easily when cut.
Its flavor is a unique harmony of tangy, salty, and subtly spicy notes, while the aroma is clean, intense, and unmistakably authentic a true reflection of the artisanal excellence of the Azeitão region.
