Cured semi-soft sheep’s cheese with a smooth, buttery texture and a white to slightly yellowish color. Made from raw sheep’s milk and coagulated with thistle flower (Cynara cardunculus L.), it offers an authentic flavor that balances spiciness, acidity, and saltiness a true expression of the Azeitão region’s rich cheesemaking tradition.
Its distinctive character comes from the unique pastures of the area and the use of natural thistle as a coagulant, resulting in a cheese of remarkable aroma and depth, soft yet full of personality.
